You need to craft them from flax.

you can make bow strings by using flax on spinning wheel. you can find flax and spinning wheel at Camelot.
this picture shows where is the nearest spinning wheel.

You can also find spinning wheel at Barbarian village, which is fast way too make strings from flax.
